1Mistake 1: Leaving the oil bottle next to the stove

This is the classic mistake: a transparent glass bottle kept right next to the hot burners for decoration. You are subjecting the oil to two of its worst enemies at once: heat and light. Your oil will lose its fresh qualities in just a couple of weeks.

Solution: Keep your main supply in a dark, cool cupboard. Keep only a small, opaque ceramic dispenser (150–250 ml) on the counter and refill it regularly.

2Mistake 2: Buying a massive bottle "to save money"

If you take 6 months to finish a large 1-liter bottle, you are not actually saving money. The air headspace inside the bottle grows as you use the oil, accelerating the oxidation of the remaining oil. The last third of the bottle will likely taste flat or rancid.

Solution: Match your bottle size to your actual consumption. If you use it slowly, buy 500 ml bottles. If you use a lot, buy a large 3–5L tin, keep it sealed in a cool dark pantry, and transfer small amounts to a smaller kitchen dispenser.

3Mistake 3: Keeping the oil in the refrigerator during summer

The fridge does not extend the shelf life of olive oil. At temperatures below 10°C, the natural fats in the oil begin to solidify and turn cloudy. While this is not toxic and the oil liquefies again at room temperature, the constant thermal cycles and humidity are not ideal for prolonged storage.

Solution: A cool pantry or cupboard (12–18°C) is perfectly sufficient.

4Mistake 4: Transparent glass bottles exposed to light

Direct sunlight is highly destructive to olive oil. In a transparent glass bottle left near a sunny window, chlorophylls act as photo-sensitizers, accelerating lipid oxidation.

Solution: Always use dark glass bottles or opaque tins, and keep them away from windows.

5Mistake 5: Forgetting to close the cap tightly

Leaving the pourer open or the cap loose allows fresh oxygen to enter the bottle constantly, driving oxidation.

Solution: Always close the cap tightly immediately after pouring.

6Mistake 6: Using cheap plastic dispensers

Some plastics contain chemical plasticizers that can leach into fats like olive oil over time, especially in a warm kitchen.

Solution: Use only dark glass, high-quality stainless steel, or glazed ceramic dispensers.

7Mistake 7: Keeping "vintage" oil for special occasions

Unlike wine, olive oil does not improve with age. Keeping a premium bottle in the back of the cupboard for two years means you will eventually open a completely flat, oxidized oil.

Solution: Buy it fresh, check the harvest date, and consume it within 12–18 months of packaging (and within 3 months of opening).
