The heart of
our quality
At the mill, every detail counts: from cleaning the olives to controlled malaxation, extraction, and storage. Here, technology and artisanal care work together to preserve freshness, aromas, and stability.

Hand harvesting
Even today in Tuscany, the olive harvest is still done traditionally by hand. The freshly harvested olives are transported to the mill and processed within 12 hours to safeguard the integrity of their aromatic and phenolic components, using a modern Alfa Laval cold extraction system.
Modern plants, controlled process
Leaf removal, crushing, malaxation, extraction, and filtration: every stage is designed to preserve aromas and stability.

Leaf removal
Removal of leaves and impurities, followed by a gentle wash.

Crushing
Rapid crushing to minimize heating and oxidation.

Malaxation
Slow mixing to combine micro-drops of oil.

Extraction
Separation without thermal stress, monitored parameters.

Filtration
Stability over time and clean profile.
From processing to the bottle
Once extracted, we protect our oil from light and oxygen. Only this way do the mill's aromas arrive intact on your table.
Cleanliness and stability
Inside the mill, the oil moves only through stainless steel containers. Plastic is excluded because it can transfer off-flavors and compromise the product's clarity, aroma, and stability.

Storage under nitrogen
After extraction, the oil is stored in stainless steel tanks protected from light, temperature swings, and oxygen exposure. Nitrogen storage helps preserve aromas, freshness, and polyphenols until bottling.

Control in every phase
We leave nothing to chance: from the arrival of the olives to the checks on the final product.
Filling and packaging line
Our bottling line handles different formats, precise labeling, and orderly packaging while maintaining continuity and cleanliness throughout the final stage of the process.
The plant is equipped with a line for bottling and packaging, and storage under nitrogen to guarantee the sensory qualities of the oil prior to bottling.
However, we don't stop there: we also offer custom milling and packaging services for third parties.

Quality and traceability
Each batch is followed carefully from olive delivery to final packaging. Traceability, process checks, and verification on the finished oil help us keep the mill's quality consistent.
- ✓Sensory analysis
- ✓Full traceability
- ✓Updated certifications
Our EVO Oil
All these factors are an absolute guarantee for the production of extra virgin olive oil of the highest quality, capable of preserving the freshness and aromas that characterize freshly pressed oil for a longer period.

PGI AND ORGANIC
Our Italian extra virgin olive oil is not only produced from olives grown with respect for the environment, but all activities for its processing are subject to the strict controls of authorized certification bodies to guarantee the end consumer a natural, controlled, and certified product. The Del Pasqua mill is certified by Suolo e Salute for the processing and production of organic products and is registered with the Tuscan Olive Oil Consortium for the production of Toscano PGI extra virgin olive oil.
