1What is rancidity chemically?

Rancidity is the unmistakable sign of oxidized olive oil. In simple terms: over time, and due to exposure to light, heat, or air, the volatile aromatic compounds change. Fresh, green aromas vanish and are replaced by stale, unpleasant notes.

It is a defect that cannot be fixed: once olive oil turns rancid, it never goes back. The good news is that it is easy to recognize if you know what to look for—and above all, if you trust your nose more than your eyes.

2The signs of rancid oil

On the nose

The first warning sign is almost always the aroma. A rancid oil does not smell like fresh olives; it smells like something left in a dusty attic.

You might perceive notes reminiscent of: * Old butter or margarine * Stale, oxidized nuts * Wet cardboard * A varnish-like or crayon-like smell in advanced stages

If you smell no green freshness at all, and only get a flat, greasy, stale aroma, the oil is rancid.

On the palate

In your mouth, rancid oil leaves a greasy, heavy film that lingers unpleasantly. Do not confuse this with the "good" peppery sensation of high-quality, polyphenol-rich oil: that throat-tingling sting is vibrant and clean. Rancid oil, on the other hand, feels stale and fat, leaving an dry, dusty finish.

Another clear indicator is the total absence of positive notes: you won't taste grass, artichoke, green tomato, or almond—only heavy grease.

On the eyes

Color will not save you. A completely rancid oil can still look beautiful and golden. That is why the ultimate test is always: smell it and taste it.

3Is it dangerous to consume rancid olive oil?

Consuming a small amount of slightly rancid oil is not immediately toxic. However, it has lost all its nutritional value: the polyphenols, vitamins, and fresh aromas are gone. Plus, it will ruin your food. There is no point in keeping it just to "avoid waste."

If the smell is strong and clearly unpleasant, the oil's life cycle is over.

4What to do with it

If you recognize your oil as rancid, the best choice is to discard it. It will not improve with cooking, it cannot be masked by other ingredients, and heating it will only make the bad smell worse.

To prevent rancidity in the future: * Buy bottle sizes that match your actual consumption. * Store it in a dark, cool place away from the stove. * Always close the cap tightly immediately after use.
