1The building blocks of olive oil

Over 98% of extra virgin olive oil consists of triglycerides—molecules formed by glycerol bound to three fatty acids. The specific ratio and profile of these fatty acids are what sets olive oil apart from all other vegetable oils.

Let's look at the three main fatty acids that build EVOO:

21. Oleic Acid (C18:1): The monounsaturated star

Oleic acid is the dominant force, representing 65% to 80% of the fatty acids in high-quality olive oil. It is a monounsaturated fatty acid, meaning it has only one double bond in its carbon chain. * Why it matters: That single double bond makes it highly resistant to oxidation (the process that turns fats rancid). It is far more stable than the polyunsaturated fats found in seed oils. * Kitchen performance: Gives EVOO its high thermal stability and excellent smoke point. * Health: Decades of cardiovascular research show it helps maintain healthy cholesterol profiles.

32. Linoleic Acid (C18:2): The essential omega-6

Linoleic acid represents 5% to 10% of EVOO. It is an essential polyunsaturated fatty acid (omega-6) containing two double bonds. * Why it matters: It is essential for human health, but its two double bonds make it much more chemically reactive and prone to oxidation than oleic acid. * Quality marker: A high linoleic acid count (>12-15%) makes an oil less stable over time and can be a marker of adulteration with cheaper seed oils.

43. Palmitic Acid (C16:0): The stable saturated fat

Palmitic acid (7% to 14%) is the main saturated fat in olive oil. Lacking any double bonds, it is highly stable. * Why it matters: Saturated fats provide physical structure. Palmitic acid is responsible for the crystallization (cloudiness or solidifying) that happens when olive oil is stored at low temperatures (below 10°C)—which is completely normal and reversible.
