1A natural molecular masterpiece
Extra virgin olive oil is not just a fat; it is a complex, natural emulsion containing hundreds of active chemical compounds. Chemically, we can split its composition into two major fractions: 1. The Saponifiable Fraction (98-99%): Made of triglycerides (glycerol bound to three fatty acids). 2. The Unsaponifiable Fraction (1-2%): A tiny but incredibly precious group containing antioxidants, sterols, vitamins, and volatile aromatic compounds.
2The Saponifiable Fraction: Fatty Acids
The core of olive oil consists of triglycerides. The fatty acids bound to them dictate its physical properties and high stability: * Oleic Acid (C18:1): A monounsaturated fatty acid representing 65% to 80% of the oil. This exceptionally high ratio is what makes olive oil unique. It has only one double bond, making it far more resistant to heat and oxidation than polyunsaturated seed oils. * Palmitic Acid (C16:0): A saturated fatty acid (7-14%). It is stable and provides structure. * Linoleic Acid (C18:2): An omega-6 polyunsaturated fatty acid (5-10%). It is essential but highly sensitive to oxidation.
3The Unsaponifiable Fraction: The Health Molecules
Representing only 1-2% of the oil, this fraction is where the magic happens. It is responsible for both the unique flavors and the extraordinary health benefits: * Polyphenols (Secoiridoids): Powerful natural antioxidants. The most prominent are Oleocanthal (which produces the clean, peppery sting in the throat and has ibuprofen-like anti-inflammatory activity) and Oleuropein (responsible for the elegant bitter taste and excellent cardiovascular protection). * Squaleene: A natural hydrocarbon (up to 0.7%) that acts as a powerful protector of the skin and cells against oxidative damage. * Tocopherols: Mostly Vitamin E, which acts as a biological antioxidant shield. * Sterols: Plant fats (like beta-sitosterol) that actively compete with cholesterol absorption in the human gut.
