1The Low Price Trick

It is now a familiar sight: long supermarket aisles filled with shiny golden bottles with "Extra Virgin Olive Oil" in large letters, and right next to them, a price tag showing unbelievable numbers like €4.99 or €5.99 per liter. It is enough to make anyone skeptical and wonder whether artisanal producers charging more than €12 are simply overpricing their oil.

But mathematics and agriculture never lie, and looking closely at the economics of the olive oil supply chain reveals a surprising and sometimes shocking truth.

2How Much a Liter of Oil Really Costs

To understand the true value of EVOO, we must start in the olive groves. Depending on the cultivar, the degree of ripeness, and the harvest year, it takes between 5 and 10 kg of fresh, completely healthy olives to extract and produce a single liter of perfect oil.

Just add up the primary costs: manual labor to harvest gently without damaging the fruit; annual pruning and grove maintenance; rapid transport to the mill; the technological process of strictly cold mechanical extraction; and finally, dark glass packaging costs, customs duties, and VAT. Once you total these unavoidable fixed costs, producing a single liter of genuinely high-quality Italian EVOO for less than €10-12 is simply impossible for any company.

3What We Buy with the Discount

So how do industrial producers achieve such bargain prices? The answer lies in origin and timing. Market giants buy bulk extra virgin oil from abroad – often Spanish or North African basins – where harvesting is highly mechanized and olives may even be gathered from the ground. Large bottlers then blend these oils, store them for long periods, and bottle them on an industrial scale.

The legal chemical parameters required to sell the product as "Extra Virgin" may still be met, but the organoleptic profile of the oil – the true vitality of the product – is often compromised.

Buying directly from the olive mill is not gastronomic snobbery. It is the best guarantee that you are bringing home a real, fresh, and uncompromised food. A spoonful of genuine EVOO is worth a hundred cheap industrial bottles.
