1Does Extra Virgin Olive Oil fry well?

Yes, it fries beautifully. And it is not just "doable": it is often a much more sensible choice than we realize. The problem is that for years we have associated extra virgin olive oil with something delicate and "only to be used raw," while we imagine frying as a world apart, made of neutral and anonymous oils.

In reality, a good olive oil is stable, holds up to heat as long as you do not push it too far, and gives you a more aromatic and cleaner fry. The best frying does not come from extreme temperatures: it comes from a proper, constant temperature that cooks well without burning.

2The smoke point, without anxiety

The smoke point is useful, but it should not be turned into a fear. If the oil smokes, it means you have gone too high. If instead you fry calmly and do not let it smoke, you are working the right way.

And above all: do not chase the idea that "the hotter, the better." Fried food turns out best when the heat is controlled, not when the oil is at its absolute limit.

3Two tips that change everything

The first is simple: if you are going to fry, use enough oil. Frying with too little oil makes it hard to heat evenly, creates temperature fluctuations, and worsens the quality of the result.

The second is even more important: do not give the oil an infinite life. If you reuse it too many times, it loses its cleanliness, changes smell, and deteriorates. It is better to fry less often, but do it well.

Frying done calmly and with a stable oil is a pleasure, not a "sin."
