1Traceability is not an option
In the food sector, traceability throughout the supply chain is regulated by strict standards (such as EU Reg. 178/2002): every operator must be able to identify suppliers and customers (traceability "one step back, one step forward"). For extra virgin olive oil, the rules are particularly detailed.
But mandatory traceability is just the minimum. We go much further.
2How our system works
The batch number
Every bottling run is identified by a specific batch number printed on the bottom of every bottle or tin. This number links directly to:
- Specific bottling date
- Reference crop season (e.g., 2025/2026)
- Olive grove of origin (GPS coordinates of the specific plots)
- Milling date (showing how many hours from harvest to milling)
Laboratory analysis per batch
Before every bottling, the batch is analyzed by an accredited laboratory (UNI CEI EN ISO/IEC 17025) for:
- Free acidity (titration)
- Peroxide value (iodometry)
- K232 & K270 (UV spectrophotometry)
- Total polyphenols (Folin-Ciocalteu)
- Sensory Panel Test (certified professional tasters)
The complete analysis certificate is always available on request for every batch.
Verifiable origin
The olives come exclusively from our own groves in Tuscany. We do not purchase olives from third parties or mixed cooperatives. This allows us to guarantee:
- Complete control of agronomic practices
- No mixing with olives of unknown origin
- Varietal traceability (specific cultivars per batch, where possible)
3How to verify it yourself
- 1Find the batch number on your bottle or tin
- 2Contact us indicating the batch number
- 3We will send you the complete laboratory analysis certificate
